Mango (or any Surplus Fruit) Icebox Cake
I may have found the best-ever recipe for fruit desserts when you've got a lot of surplus fruit around. 4 ingredients. No baking. Creamy and fruity and delicious. It's magical!
It all started when I went grocery shopping and was about to buy mangoes when I realized I was out of mesh produce bags. So instead of using a plastic bag to buy 2 or 3 mangoes...I bought a whole case. Totally reasonable, right? I then asked all my Instagram friends what to make with my extra mangoes and there were so many good suggestions.
The most exciting one was a Mango Icebox Cake from @trishofthetrade, so I googled and found this Mango Royale by The Little Epicurean, a take on the Filipino dessert crema de fruta. All you need is graham crackers (although you could use cookies or cake), heavy cream for whipping, sweetened condensed milk to flavor the cream (although you could also just sweeten with sugar or maple syrup) and then a lot of sliced or diced mango. I'd like to try this with strawberries or blueberries....it would be a great banana pudding-like dessert also if you have a lot of ripe bananas to use up (which I do). Essentially, it's a great recipe to have on hand for the next time you've got any extra fruit. The hardest part is just waiting for it to be ready!
