VIDEO: Baked Eggs or Shakshuka in Red and Green
We’re using up tomatoes and random greens in baked egg, often called Shakshuka, for this Live demo! I love baked eggs as an easy brunch dish - this one had bacon, kale and chard but today we’ll be using up leftover braised cabbage, zucchini and baby spinach. Mel makes an awesome curry-inspired shakshuka with tomato sauce and fresh tomatoes and we’ll show you how to do both. ⠀

How do you like your #shakshuka? Or if you’re wondering wtf is shakshuka, it’s a delicious Israeli/North African dish typically made with tomatoes and eggs that is adaptable to adding lots of ingredients that might need to be used up. Not traditional, but that’s something we’ll never claim to be! And it’s a great pantry dish as long as you have eggs. More info in the video, or the loose recipe here.
